Cardamom and spelt flour cake

Not to sound too big headed but I can openly proclaim I have found a super easy solution to my baking mishaps. Let’s be honest- sometimes even baking powder will not prevent your cake from sinking in…and then your heart sinks too. But I know how to stop it from happening! Read on!

Yup! The clue is in the title- spelt flor. It seems that this magical ingredient fixes all the issues with sinking in cakes. They turn out to be fluffy and sweet. You need to adjust the baking time (a little bit longer) and the temperature (a little bit lower) and you have got show stopping cakes! Se here it comes- a fragrant cake with orange, cardamom and ground almonds.


*juice from 1 orange

*250g chopped pitted dates

*250g butter

*100g brown sugar (you might add more as the dates might be sweet enough)

4 eggs

*250g spelt flour

* bicarbonate soda

*10 cardamom pods

*100g ground almonds

*2 tbsp. icing sugar

  1. Place the orange juice in a pan and add chopped dates. Heat together for 2-3 minutes. Let it cool.
  2. Whisk the butter and sugar together until pale and creamy. Add eggs, one by one. Slowly add flour, bicarbonate soda and the cardamom seeds, ground almonds and a pinch of salt.
  3. Stir in the dates. Transfer into a tin and smooth the surface. Bake for around 1 hour and 20 minutes (140 degrees). Turn the oven off and let the cake cool down.
  4. Mix icing sugar with 2 tablespoons of orange juice. Decorate the cake when it is completely cool. Enjoy!
