It is not too late. It is never too late to bake a cake. Ok. There is actually no baking involved but the final result is quite stunning. The avocado and lime cake is super tasty with smooth texture of healthy avocados and tangy freshness of limes. It is very easy and quick to make. 100g coconut oil
200g dates (no pits)
50g desiccated coconut
4 ripe avocados
150g clear honey (or 50g agave syrup for a vegan option)
- Melt coconut oil on a low heat. Cool down. Brush a small cake tin with some coconut oil and place baking paper in a tin.
- Place the dates, almonds and desiccated coconut in a blender and whizz until finely chopped and combined. Add half of the melted coconut oil. Transfer into the tin and press it down with a spoon. Place in the fridge for 30 minutes.
- Peel the avocados, remove the stones. Place the avocados, juice from the limes and some zest, honey, remaining coconut oil in a blender. Blend until smooth. Pour over the base, smooth the top and place in the fridge for at least 2 hours. You can put the cake into the freezer for 30 minutes just before serving. Enjoy!
